Use as a dry brine
Dry brining simply put is the process of salting food and letting it rest for a period of time before cooking.
You can brine your protein by coating the exterior of the meat with the brine, and let sit in the fridge over night. This locks in moisture and adds flavor. This is how I cook my Thanksgiving turkey!
Wet brine
Mix the brine with water and soak over night. Wet brines will allow flavor to penetrate into your meet or vegetables and it adds moisture as you cook.
Cook with it
When using dry brine for cooking, use brine just as you would salt. Use it to salt your cooking water, season your meat, or add to the table for use as a finishing salt.

This is my favorite spice blend. We use it on chicken and fish. It is complex and a bit spicy. The Best!
Came on time and excellent spices
Just one of many, many things Wah Gwan gets used on and in. Sear a pork loin fatty side with Wah Gwan and Dry Brine in hot pan with bacon fat. Then throw in a roasting pan with the juices from pan and top with a mix of dry powdered mustard, Dijon mustard, salt, minced garlic, fresh lime juice and maple syrup (honey can also work). Roast 375 f for 45m. Use the pan juices of all to make a gravy, adding some red wine, bourbon and any little tweaks to taste and thickener (e.g., corn starch, or flour or other).

I have been sprinkling my seasoning on everything even the rim of my margarita!
I ordered the all-purpose seasoning and the finishing salt. Because of summer travel and hot days with limited kitchen use, I haven't been cooking too much and still need to get some more use out of the all-purpose seasoning (the few times I did try it, it was great though). However, I've been using the finishing salt regularly and both my husband and I are hooked — on egg dishes, meats, fresh summer veggies, even brownies! Great texture and crunch, perfect amount of saltiness. Also lets you really dial in the amount of salt per person, which is great if you're cooking for kiddos.
Since purchasing Wah Gwan seasoning I’ve used it on seafood, chicken, pork, lamb and beef and the flavor profile it provides is AMAZING. What really blows my mind is that it’s completely sodium free, so for someone like me who has high blood pressure and stay always from sodium, Wah Gwan always me to use as much as I want to seek maximum flavor. I’ve purchased more since my first purchase and will be placing another order today! I LOVE IT!!!!
